A word of explanation
The recipes: The recipes that are not from another country are mine, those who are, are recipes that I tried, tasted and adapted to my delicate Western palate. At the same time I always refer to the original recipe (if it's to be found on the net). I do try to preserve the authentic taste of the dish. No 'Indian' curry with pine-apple and raisins here.
Glutenfree: I did go through the labour of trying to find delicious recipes while eating gluten free at some time in my life. In a country where wheat seems omnipresent, it really is not easy. Foreign dishes can be a partial answer. In the Indian, Iranian and East-African cuisine for example, rice is often used at the main course, spices and salt replace stock and even desserts are made with rice flour, rice grits or chickpea flour.
